                                        Island crab with okra.                         

 

     Ingredients  

       Okra: 1 lb

      Scallion: 3

      Crab meat: 2 lbs freshly bought.

      Spinach fresh and green: 1 lb

      Fresh thyme: 2 branches.As an alternative you can use dry thyme.In       this case use 1/2 teaspoon.

      Garlic: 2 cloves

      Peanut oil: 3 tablespoons.

      Limes:3

      Water: 7 cups.

      Ground black pepper.

      Iodized salt.

      Chili: 1.Use the scotch bonnet type. Prick with a fork.

      Slab bacon: 1/2 lb

 

      Cooking directions.

 

        1  Cut both ends of each okra and slice them in small dices. Mince the 3            scallions, including the green tops. Wash the spinach very well.            Remove the stems: we will only use  the green leaves. Mince the two            garlic cloves. Squeeze the juice out of the 3 limes in a small            container..Slice the 1/2 lb of bacon into 1/4 inch dices.

       2  In a large frypan, heat slightly the peanut oil. Add the 2 lbs of crab             meat with the scallion in the frypan. Add  the crumbled thyme or the             1/2  teaspoon of  dried thyme. Fry the crab meat until brown. Brown             the bacon in a cooking pot to get the fat.   Add the spinach in the              bacon fat and heat it until it becomes limp.  Add the okra together with             the water.

        3  Sprinkle the black pepper and  add salt to  the mixture. Cook             everything  in the pot for twenty minutes. Don't cover. Instead, Use a             whisk to stirr the okra while it's cooking.

        4  When the okra is  done, add the crab meat in the pot. Add the pricked             chili and the remaining garlic. Reduce the heat to low and let the              cooking go for 20 minutes. Occasionally stirr  with a wooden spoon.              When the content in the pot is well done to your taste, add the lime              juice. Stirr gently with whisk or wooden spoon.

             Serve this delicious pot hot. The amount of each ingredients used in              this island recipe makes a meal for four to six persons.
